對故鄉美食的記憶,則是最直接又最能讓人食指大動的:無論你身處何方,故鄉的味道總是縈繞在腦中,揮之不去。

The memories about home cuisine are the most powerful ones. No matter where you are, the taste of your hometown is always lingering in your mind.

每個地方的人都有自己的美食情懷,那麼,對於昆明人來說,有哪些讓人魂牽夢繞的舌尖記憶呢?

Every place has its own food feelings. So what sweet memories are haunting Kunming people in their dreams?

酸漿米線

昆明,是米線王國,不過,作為原材料的米線,在昆明主要有兩種:酸漿米線和幹漿米線。分酸漿和幹漿,是做法和工藝上的不同,而在形態上來說,酸漿的是粗米線,幹漿的是細米線。

Kunming is the rice noodles kingdom. However, there are mainly two kinds of rice noodles in Kunming: sour rice noodles and dry rice noodles. Their cooking makes the difference between them. In other words, they are crude and fine noodles.

對於地道的昆明人來說,吃米線,指的就是吃酸漿米線,相對於幹漿米線,酸漿米線味道略微帶些酸味,口感偏軟,這是老昆明人多少年多少輩形成的口味。

For authentic Kunming people, eating rice noodles, refers eating crude noodles, because it tastes more slight and soft. This is how ages formed tastes of old Kunming people.

燒餌塊加油條

燒餌塊是昆明非常日常的小吃,看看滿大街的燒餌塊店就知道了。

This is very common snack in Kunming. Look at the bake shop on the main street.

餌塊本身就很實在,再加根油條,米麵都有了,特別頂飽。兩者在火上現賣現烤,拿在手裡暖,吃在嘴裡糯,再根據個人喜好塗抹上花生醬、芝麻醬、甜醬油、牛肉醬、香菇醬、滷腐等,鮮香味美,怪不得昆明人愛拿它當早點。

Cakes itself are already well-done, then add fried dough sticks, and together with noodles it will make you especially full. Just roasted cakes are so warm in your hands and glutinous in your mouth. They are then smeared with peanut butter, sesame sauce, sweet soy sauce, beef sauce, mushroom sauce, brine rot and so on. No wonder Kunming people like to use them as breakfast.

老奶洋芋

LaoNai potato

老奶洋芋,顧名思義:牙口不好的老奶奶也能吃,可以想見這道菜是多麼的綿軟了。

As the name implies: bad tooth grandma can also eat it, you can imagine how soft this dish is.

老奶洋芋是昆明人的家常菜:幹辣椒、花椒、蔥花入油鍋炸出香味,倒入煮熟搗成泥狀的土豆,再輔以酸菜略微翻炒即可。

It is a common dish of Kunming people: dried pepper and onions put into a frying pan, pour into boiled mashed potatoes, and then slightly fry for a while.

老奶洋芋,不僅口感綿軟,而且味道十足,說甩快餐店裡的土豆泥幾條街也不為過,而且此菜做法簡單,無論老少,都極為喜愛。

LaoNai potato has not only soft taste, but it is also full of flavor. It is similar to the mashed potatoes in the fast food restaurants. This dish is simple, many people are very fond of it.

蘸水苦菜

對於昆明人來說,最普通的蔬菜也能吃出味道吃上席,苦菜就是其中之一。

苦菜性涼,具清熱解毒之功效。用苦菜做湯,色澤清新可人;湯味略苦,但用來解油解膩,那效果可是槓槓滴。

Bitter vegetable are cool and has the effect of clearing away heat and detoxification. Soup made with bitter vegetables is refreshing and has nice color. Soup tastes bitter, but it is used to relieve greasy oil, and the effect is dripping.

蘸水苦菜,除了苦菜,蘸水那一定也是不可或缺的。幹辣椒火上略烤,搗碎,配以花椒麵、鹽巴、香油、味精,想要再辣點兒的加些小米辣,各家都有各家的口味,相信你一定記得你家的!

官渡粑粑

北方有餡餅,雲南有粑粑。昆明最出名的粑粑叫官渡粑粑,官渡粑粑自然是原產地官渡古鎮的好吃,不過尋常街巷裡做的味道也不差。

There are pies in the north, and Baba cakes in Yunnan. Kunming's most famous cakes are called Guandu cakes. Guandu cakes appeared in Guandu ancient town, but they are also not bad in ordinary streets and lanes.

官渡粑粑的餡以甜為主,有花生、胡麻、芝麻等,後期還新創了玫瑰餡的,別有一番風味。

昆明街頭涼拌豌豆粉是主流,不過還有一種做法是油炸,為老昆明人所熟悉。油炸豌豆粉的特色是經過油炸之後,外面焦脆酥鬆,裡面綿軟鮮嫩,口感極好。

Pea flour salad can be easily found in Kunming streets, but there is another way of cooking, that is familiar to the old Kunming people. Fried pea flour is characterized by its crispy skin, soft and tender filling, and excellent taste.

油炸豌豆粉對於火候的把握要求比較高,再加上需油炸這道工序,所以做的人越來越少了,不過你要是有心找的話,還是能找到的,而且物以稀為貴,想驗證你是一個正宗的吃貨?出發吧!

小刀鴨

相較於前面的家常菜和小吃,小刀鴨算是一道館子菜了,而且是滇系名菜。鴨子選用雲南特有的品種小麻鴨,以松毛結為燃料,入爐烘烤。
